Amaranth flour is made from the grain-like seed of a native Mexican plant and
a traditional food of the ancient Aztecs. It is a complete protein and high
in calcium as well as other nutrients. It is not a grain, is used with
grain-free diets. We've used this for the past year, in combination with
other flours (it has a fairly pronounced flavor), and have had no
complications. I have no information to suggest that there is gluten in
this. I usually have to order this from my health food store (which is
pathetic anyway and I ALWAYS have to order things).
