The "dry", "water-based", or "water-soluble" forms of the fat-soluble
vitamins: A, D, E, & K, are actually "water-dispersed", meaning that an
emulsifier is included in the formulation so that the fatty vitamin is
dipersed into many tiny fat droplets. Hopefully your digestive system has
a greater opportunity to absorb it than if it went through your system in
a few large oily drops. Most health food stores I have been to have
vitamins labeled as GF. Here are some examples from the several brands
that are available:
        Allergy A & D Caps      Twinlab         no barley, wheat,...
        Dry E 400 I.U.          Nature's Life   no gluten, wheat,...
        Vitamin K 100           KAL             no gluten, wheat,...

I don't think it is possible to create truly water-soluble forms of A, D,
E, & K, and I do not know if they are metabolized differently, but I
personally feel the "water-dispersed" form is more effective for my body.
