My 22 year old daughter is celiac (like me). She is intent on taking more in depth baking classes in a school to delve into the amazing and creative area of BAKING gluten free. 

Can you please recommend a "school" for her needs or suggestions? She is willing to travel. 

Her dilemma is that she feels she should get the basics of baking with "wheat" to be able to then adapt any recipe with skill to a gluten free baking "success", but then she will need to be in a baking school around wheat quite a bit, which could be very unhealthy for her body. 

We would love not only recommendations but also any other families or baker  who've had similar experience and what route they took and details.

She has worked with me and my baking/cooking team yet a professional school  would be ideal with her goals and aspirations at this stage of the game. She is aware of one chef at Culinary Institute in New York who offers a terrific GF short session.
