Emilio - The tendonitis was probably due to over training and poor mobility in the first place. Five fingers demand a greater (more natural) ankle range and proper positioning of the foot. Running shoes handicap most people from too much support. When they start going barefoot their arches usually collapse and lead to strain in the ankle, knee, and hip if they do not adjust their movement pattern.

Jim - Your program looks good for a low carb diet as far as volume goes. Keep in mind that you are also not seeking huge strength gains like a modern athlete might. There is a very big difference in training for health/longevity - and training to maximize performance. It is a matter of individual needs as are most things health related. I personally am a competitive powerlifter (compete @ 165lb) and have run programs on LC Paleo, LC Lacto-Paleo, and a Moderate Carb Paleo - all for periods of at least six months. The strength gain - muscle mass - and recovery rate  are all much slower without starch or dairy. To grow larger or stronger quick enough to stay competitive demands higher levels of insulin in the bloodstream on training days (hence carbs+milk) - not to mention carbohydrate has a greater effect on leptin sensitivity which is useful for staying relatively lean.

This situation is totally different for an average 50 year old looking for optimal health, as you know. Im just making the case for a hard training athlete. Most of my clients end up in the carb range of <75g for the long term, all coming from vegetable matter or raw dairy.
