I was at PF Changs last week and noticed they had Chicken w/carmelized
mangoes. I bought some pre-sliced mangoes at Whole Foods yesterday and they
were hard as a rock. I put about 3 Tbsp of sugar in a nonstick pan and let
it turn light brown - added about a cup of water, 1 Tbsp butter, a pinch of
cinnamon and large pinch of cayenne. After about 30 minutes, the mangoes
were carmelized and delicious. Nest time I go to PF Changs, I'll try the
chicken with mangoes. Watch the pan closely so the water doesn't cook down
and burn the sauce.
