Last week, I posted a soba noodle recipe and downloaded several others from the Cooking Channel website, but when I went to the local healthfood store today, the only brand of soba noodles (buckwheat) they had was Eden. The package said it is made on the same lines as wheat, so that wasn't going to work.
Does anyone know of a brand of soba noodles that is gluten free? The local store will often order special requests, if the product is carried by their supplier, but I don't know what brand to ask for.
This is a very small town....but the store is great. I won't be near a Whole Foods, Wegmans, etc. for another few days...and have no guarantee they will have anything gf.
The Internet wasn't very helpful. I am not planning to make my own from scratch. if I truly can get gf soba noodles, I will probably try al dente brown rice. But the nutrition won't be the same.
