Dear Listmates,

With the advent of the Amazon Kindle, it is now very difficult to research
the origins of a cookie-like pastry called a kindle. I did find a partial
reference at http://chowhound.chow.com/topics/617423 . Jelly-Nut Kindle has
been a tradition in my wife's family for years, and they used an old recipe
for this fruit and nut roll-up cookie. We made a gluten-free version for a
party we attended recently. The guests said - "Can Vic really eat this?" I
guess that is the mark of good GF.

The recipe is simple, but the preparation is a bit tricky. While my wife
usually makes the goodies, I actually made these cookies. And if I can make
them, certainly you can, too. Here is where to find it: Navigate to
http://bit.ly/GF_Bake or if you have trouble the longer version of the
address is http://home.comcast.net/~vhdolcourt/gfbaking/ . Go to the
desserts section, cookies sub-section. Jelly-nut kindle is third up from the
bottom. This dessert is dairy-free but not fat-free (unfortunately).
However, the cookie is very satisfying, so you wont' be tempted to eat scads
(maybe).

Please let us know if you have questions.

Vic-Sunnyvale, CA
