The keys you think of as alt, windows, and ctrl are command, options, and
ctrl for the Mac.

to turn accessibility on, press command+F5.

Some Windows shortcuts work, only you use command instead of control: 
command+p for print and command+s for save.

Once you get through the Vision Australia material, you can go through the
Voiceover manual. It's actually very helpful, but the first couple of
chapters are overwhelming, so you may want to read them in order to pick and
choose what sounds useful; then move on to the later chapters, where you get
information on using Voiceover with specific apps.
