Hi, most of what I learned is pretty much what I knew.  Make sure utensils are washed thoroughly and if in doubt use separate utensils when making gf.  Anything you dip into, you either have separate ones or only use clean utensils.  If you had cream cheese for bagels, you will need two cream cheese or some cream cheese or have the person with the gluten allergy help themselves first.  Keep everything sealed.
