Wow, got lots of great responses on my millet bread questions!
Udi's Millet-Chia Ancient Grain bread received five positive responses.
One person commented that the Food For Life Rice Millet is even better than the
Sami's. However another listmate said they would not trust Food For Life
products as they may not be truly gluten free. (I have not personally looked
into this as of yet).
Another member suggested Deland Bakery bread, specifically their oatmeal bread,
but they also make millet hotdog and hamburger buns and dinner rolls. They have
a dedicated 2,000 sq ft GF bakery in Deland, FL and ship to over 200 stores.
Once again, another listmate commented that Deland should be avoided, as there
are cross contamination issues. I would have to look into whether they have a
dedicated gf facility or not prior to ordering from them.
Katz, Celiac Specialties and Rudi's were also recommended as having good bread
products, and I also received a reply from Lil Country Acre GF Bakery & Cafe.
I also received two recipes for bread that sound great, as well as good advice
on substituting millet flour in other recipes. One comment I found interesting
was that the Sami's is a soda bread, and that is why i think I like it . . . it
reminds me of an English Muffin bread my grandma used to make! If anyone would
like me to forward the recipes to you, I would be more than happy to do so!
Several people responded to say that Sami's is not safe for Celiacs and should
be avoided, which is the reason I was looking for something comparable. My 12
y.o. daughter is the Celiac in the family, but my husband and I have just
started eating gluten free as well, so he and I were eating the Sami's and I
wanted to find something as good that she could eat. She will not eat
sandwiches because of all the breads we've bought or baked over the last 10
years, she really doesn't like any of them! (we've tried everything: Udi's,
Rudi's, Whole Foods, Glutino, Glutino Genius, Kinnickinnick, Ener G, Schar, you
name it. . .)
