I got what looks like a really good recipe.
1 1/2 cup GF flour mix
1 cup sugar, (try 1/2 cup Splenda and 1/2 cup sugar)
2 tsp baking powder
1/2 tsp guar gum
1 tsp vanilla,
1/2 tsp salt,
2 eggs,
3/4 cup oil,
1/2 cup milk. add cinnamon etc. nuts, raisins, dates.
Bake 25 minutes at 350
