So as I'm currently enjoying the amazingly tasty Glutabye gluten-free croissants that my friend brought me back from Italy, I wondered if it was worth asking here why it is that no U.S. gluten-free food manufacturer produces croissants. In looking at the ingredient list of the Glutabye ones or others I saw in Italy, there doesn't seem to be any ingredient that couldn't be obtained here. 
 
I know a few U.S. companies offer somewhat similar products or products labeled as croissants, but as anyone else who's had this brand in Europe can attest, these actually have a somewhat similar consistency to real croissants with the flaky, buttery pastry. (The first ingredient is butter, and it shows!)
 
I would guess I'm far from the only one who would jump at purchasing these if they were available here. Just putting that out there . . . maybe someone will see this and decide to start producing them! (Or importing them . . .?)
