I noticed the first summary didn't include most of the message.  Let's try
this again.

 

Thank you to those who responded.  Your responses were of great help.  

Also, thanks to Judy Smither, President of the Gluten Intolerance Group of
the Black Hills.  She had lots of great suggestions.

Below are the restaurants people suggested.

We had a wonderful time and pretty easy time eating.  We only went out a few
times, since we camped and could make most of our own meals.  The drive from
Rapid City to Custer State Park didn't really seem that far.

Beau Jo's Pizza on West Main (excellent salad bar also)www.beaujos.com
We went to this one.  Excellent pizza.  It was so good, that my husband
ordered a sandwich for the next day.  

Boston's Pizza near Rushmore Mall

Sam & Louie's Pizza on Mt. Rushmore Road

Pizza Ranch near Rushmore Crossing

Chili's on Haines Avenue

Outback Steakhouse off I'90

Longhorn Steakhouse, Rushmore Crossing

Qdoba, Rushmore Crossing

Texas Roadhouse, near Rushmore Mall

Ruby Tuesday's, Mt. Rushmore Road

Alternative Fuel, downtown offers GF muffins & bars (coffee house)

The Grill at Rushmore Plaza Holiday Inn (no GF menu, but can prepare GF)

Minerva's at Ramkota Inn (no GF menu, but can prepare GF)

Prairie Berry Winery in Hill City (limited GF menu and a little expensive)
Use caution as they served regular bread with some GF items.      We didn't
eat here, but the wine was wonderful.
