Swedish Pancakes


Heat together in saucepan:

1 cup milk
2 TBSP butter

When slightly cooled, beat in:

2 eggs, beaten
1/2 cup gf flour
1 tsp. baking powder
Dash salt

Beat until smooth.

Cook in a small amt of butter (1/4 tsp) in a preheated nonstick pan.  
They're great with fresh berries/little amt of canned whipped cream.  They also 
make great crepes for whatever recipe you like.

I've not changed the recipe at all - they're just as she made them - no 
xanthan gum etc.

Note:  You have to stir the mix a lot if you let it sit in the frig 
overnight - the flour settles.  I mix the whole thing in the blender after the 
milk/butter has cooled.
