Gluten Free Expo...we currently have over 65 vendors ....from local
restaurants (Plant & Posana) and bakers (Dolci Di Maria) to national brands
like King Arthur, Bob's Red Mill and Bolthouse Farms. We would GREATLY
appreciate it if you could share this with anyone you know who is on a
gluten free diet and especially anyone who has celiac disease or non-celiac
gluten sensitivity.

-From 9 a.m.-11 a.m. there is a special Food Service Training -
pre-registration - Cost is $30 for the first attendee with a 15% discount
when two or more attendees register together from the same facility.

For dining facility, kitchen, and restaurant staff: Participants will gain
the knowledge and tools to prepare gluten-free meals with confidence. Topics
to be covered include a review of the various types of gluten-related
illnesses, how to identify gluten-containing ingredients, food labeling
regulations, menu planning, purchasing, food preparation techniques to avoid
cross-contact with gluten, and staff training and education. Cynthia Kupper
of Gluten Intolerance Group of North America (GIG), Laurie Steenwyk-
Dietitian at Pardee Hospital & Embassy Suites Executive Chef. Aaron Flores
will conduct training.

-Vendor expo 10am-1pm - $5 entry for those 12 & over will feature baking
demo by Dolci Di Maria and from 11:30-12:30pm a quinoa cooking demo by James
Beard Chef & Dietitian for NBC's "The Biggest Loser" - Cheryl Forberg

-1-2:30 pm - Talk by Carol Shilson - Executive Director of the Celiac
Disease Research Center followed by a panel discussion also featuring the
Gluten Intolerance Group of N. Am.
