I can't find the name of the person who originally posted about Udis bread  
so I am combining my thank you note and posting to the list to tell 
everyone BUY  THIS BREAD.  I bought my first loaf expecting to be disappointed as  
usual.  What a surprise!  It was like "real" bread.  I ate a  whole loaf in 
a couple of days.  No toasting, no microwaving, just put out  to thaw.  I 
have been eating sandwiches for the first time in 15  years.  French toast 
too.  Anyway I have e mailed Udis and Whole  Foods (where I bought it) and I am 
ordering a case (if it comes that way).   Celiac heaven.  Olivia in VA
