For those of you who, like me, do not like brown rice I suggest you try
quinoa. I tried it for the first time yesterday and liked it very much. I
cooked it in my rice cooker the same way and time I use for white rice
(except I did rinse it in cold water first). I used canned chicken broth for
the liquid. It came out perfectly and deliciously. I mixed it with finely
diced cucumbers, onions, carrots, garlic, and a little olive oil. Yummy.
It also reheated in the microwave very well. I am thinking that in a
cooked state it might also be useful for filler in things like meatloaf where
you usually would use bread crumbs. I am excited about exploring new ways
to use it. As a vegetarian I am always happy to find a new source of
complete protein. Olivia in VA PS: I bought mine at Costco and it is marked
organic and gluten free.
