Thanks for everyones response to shopping for foods in the Disney World area. 
Sorry for the delay in this summary:

Not sure where you are staying but Publix is a major chain in Florida.  They 
have excellent GF options, if you go to their website you can print out their GF 
offerings in advance.
 
We stocked up at Whole Foods.  http://wholefoodsmarket.com/stores/orlando/
 
The local Publix supermarkets have some GF items. There is one at the 
intersection of 192 and 535, there are 2 or 3 more on west 192, not sure area 
you will actually be in. If you take the Interstate-4 east to Sand Lake Road, 
then turn left, there is a Whole Foods store about 2 blocks from there. If you 
continue down Sand Lake Road about another mile, there is a health food store 
call Chamberlin's in the shopping center at the corner of Sand Lake Road and Dr. 
Phillips Blvd
