For those of you who were kind enough to try and find tarragon vinegar for
me and asked for the recipe, here it is. I located the TV at Central
Market, a local store. It's Vilux and made in France
Tarragon Cole Slaw
1/3 cup tarragon vinegar
1/4 cup sugar
1 Tbsp Dijon mustard
salt and pepper to taste
3/4 cup olive oil (or vegetable oil if you prefer)
1 package cole slow with carrots or shred your own
Combine vinegar, sugar, dijon mustard, salt and pepper. In a blender, at
high speed, beat oil into vinegar mixture a little at a time until dressing
thickens.
Toss vegetable with just enough dressing to moisten. Refrigerate until
ready to serve.
