It is quite normal to eat them raw here (italy). Thinly sliced on carpaccio
it's a classic. Leaves can be eaten raw as well (only the whitish part...)
dipped in oil salt and vinegar. The artichokes must be young (small) and
tender.

Yes, I've eaten the hearts unheated. I assume that the steaming removes
some enzymes/nutrients, etc. I prefer them steamed though :-)
