I am still on my boat and forgot if I sent this. A few days ago, I came up with a recipe that was a hit with the other boaters on this sail. You can alter the order of things, but basically, you want to end up with rice..flavored with GF vegetable broth, with sautéed garlic, diced red onion, and tomatoes...cherry or grape, and sliced black olives and canned artichoke hearts.
I used 5 Uncle Bens brown rice and white rice (total), the 90 sec packs, for 14 people...and had way too much, because everyone was bringing food. Leftover rice or any par cooked rice will be fine. I put the rice in a big pot and set aside.
In a frying pan, I sautéed in olive oil, one half diced large red onion, one pack cut up cherry tomatoes and diced or dried garlic. I dumped the stuff on the rice, and added a large can of artichoke hearts...cut up, and two small cans of sliced black olives. It could have used more artichoke hearts. All I had was a 8.5 oz can.
I then added vegetable broth to the oil residue in the fry pan and brought to a boil and dumped it on to the rice mixture.
Stir well and heat through on low.
