Hi again,
I wanted to share this little recipe with those who are eating lower carb
and
avoiding grains also.
It was given to me at a Celiac Support group picnic and I think it is
really a fun little recipe to make... great for breakfast with some berries
or a little butter. Feels like you are eating a pancake! I do not know how
many carbs it has but it is lower than one made with other flours.
Recipe:
In a ramekin bowl (I use one the size of a cereal bowl) put in 1 T coconut
oil
Swish this around to cover sides a bit
Add in 2 T. ground flax (or use ground Chia seeds or half flax and half
Chia)
Add 1/4 cup almond flour/meal
Add 1/4 t. baking soda
Mix all together and add one egg and mix again
Place in microwave and cook on high power for 1 minute.
You then can flip it out of the bowl and eat it warm.
Add whatever you want as topping or eat it plain. :)
