Quercetin has been shown to be a powerful inhibitor of phospholipase A2
which is the enzyme responsible for "clipping" arachidonic acid from the
cells' phopholipid bilayer.  This cascade of reactions beginning with
phopholipase A2 is what initiates AA's role in mast cell degranulation.
