Well, there are 3 POVs re this. The mainstream studies state that all saturated fats are harmful and increase the risk of heart-disease and early death etc. with them promoting polyunsaturated fats as being very healthy, while Taubes and some others state that saturated fats are super-healthy and that polyunsaturated fats are the real problem. The 3rd viewpoint is that the real reason for saturated fats being cited as being harmful is because of the (heat-created) glycotoxins present in cooked saturated fats, so that raw saturated fats are fine. It is interesting to note that foods high in cooked saturated fats(eg:- pasteurised dairy products) also have a high load of advanced glycation end products in them:-

Re previous e-mail:- grassfed organ-meats are much cheaper than grassfed muscle-meats, and have higher nutrient-levels as well. Plus, my own personal experience is that the cheaper cuts of grassfed meats are at least as nutritious, and maybe even better, than the more expensive cuts.
