Taubes is such a good a science communicator, this is the best explanation we are likely to find in the popular media. So it would be a shame if Paleofood members were still puzzled by the basic processes covered here (to the extent that they're known). I am certainly not suggesting that I have the answers, but I do invite people who are not clear about the physiology, nutrition, history etc. to take this opportunity to toss their questions into the ring - there may be someone among us who can clarify.
