A quick recipe for when you want something "Different" but don't have all day
and nothing is thawed.
1 onion wedged
2 cups frozen vegetables, I used broccoli and yellow (summer) squash
1-2 cups frozen shrimp
cayenne
garlic
curry powder
stir fry in walnut oil and a little water until thawed through and almost hot
add 1/4 to 1/2 cup pure coconut milk and more curry powder, stir to coat and
cook until heated through. Serve. Takes about 15 minutes, max.
Obviously this also works with all kinds of paleo correct vegetables and
meats.
