I would be interested in learning about successful admissions to long term care for someone with Celiac Disease.  Please let me know if you have been successful in getting someone admitted to a  nursing home and what avenues you had to take to find a nursing home for a loved one.   Also, if there is a particular chain that is more likely to be gluten friendly or maybe just willing to work with a gluten free diet.  Thanks in advance for your assistance.
