To the best of my knowledge, the oysters have not been frozen. In fact, I
purchase them directly from a place that "catches" the oysters from the sea
-- in fact, the building sits on a dock. You can actually watch the
cleaning and shell-opening process through a big glass window. I haven't
personally done so because I tend to swing by the place during the evening.
Some of my favorite "bits" of animals are:
- pork belly (delicious when I need it)
- lamb shoulder chop
- sirlion and rib eye steak
- bone marrow from beef bone
- escalar tuna (the best fish I've ever had!)
- eggs from free-range hens (delicious! Usually I eat the whole egg;
sometimes I eat just the yolk; i haven't tried eating the shell yet.)
I also eat raw beef liver on ocassion and find it quite good.
BTW, I would recommend you look around and try organic eggs from different
sources. You'll find that some sources are head and shoulders above the
others and it's well worth the effort to find them.
