Having been diagnosed as a celiac more than 30 years ago I've learned to bake nearly every type of baked good except a decent gf pie crust.  I'd love to bake a double crust blueberry pie but the last time I tried the crust crumbled.  Others were tough as nails or pasty -- frankly, awful. Does anyone have a tried and true recipe for a 2-crust pie that they are willing to share?

I'll be happy to summarize and share the recipe.
