Hi all,
As I get closer to a scheduled surgery date and a 6-8 week convalescence, I'm a little perplexed at the lack of low sodium gf vegetarian prepared foods - "shelf" packaged or frozen. I've purchased many cans of Health Valley "no salt added" just heat tomato soups that I plan to use as a base & then add veggies, quinoa or rice flakes, tofu for simple, but pretty complete nourishment.
As much as possible, I'll need cooking to be at a minimum: stove-top, toaster oven, & microwave.
I'd love to get your suggestions! I live close enough to the US border to travel to Bellingham, WA this weekend to shop if your suggestions can't be located where I live - Vancouver, BC.
