http://tinyurl.com/28es8k6 Here is some additional information on yeast extract you may find useful. Yeast extract and autolyzed yeast extract may be derived from "spent" brewer's yeast (yeast that is a by-product of beer brewing). A few months ago I tested Marmite for gluten. Marmite is essentially yeast extract made from spent brewer's yeast. The findings can be found at the link at the beginning of the post. It is very difficult to test for gluten in yeast extract because it is a highly hydrolyzed product and the Competitive R5 ELISA must be used. We need to know two things. How often are yeast extract and autolyzed yeast extract derived from spent brewer's yeast and if they are derived from brewer's yeast does it matter in terms of the amount of gluten they contain. I am hoping to conduct this study soon but funding is always an issue.
