Even in Canada, the rules have changed over the years.  When my wife was
first diagnosed about 25 years ago, wheat starch was allowed. A company
in Winnipeg called Celi-mix made all sorts of baking mixes that had wheat
starch.  These products were used with success (or was small intestine
damage taking place without feeling it?)  We'll never know, but now she
has been diagnosed with hypoglycemia as well. Maybe the wheat starch DID
have a negative effect.

We too have always wondered why, for example, wheat starch and even oats
are allowed in the U.K. but not in the U.S. or Canada. After all, as
Karen says, it's the same disease, or is it..........?
