I recently had just the opposite experience of several recent posters.
On Monday I took a short flight (just over one hour) on a small regional
airline (NorOntair), in a small 31 passenger turboprop - not exactly
where one expects to get great service. But I guess my travel agent had
mentioned that I was a celiac, because before the meal/snack was served
the stewardess mentioned that they had a special one for me. A rice cake
with jam and fruit for breakfast, and rice cake, butter, meat slices and
fruit at dinner. Not fantastic, but better than the alternatives, and
better than I have received on some much longer US flights (did I mention
the US flight where my specially requested meal had pasta and a sauce,
and all the other meals on the flight were gluten-free!). Just wish I
knew how to make this happen all the time.
