Thanks to all who replied (and I did get over 10 replies). The overwhelming response was that there is no gluten in the glue on envelopes. There were perhaps two people who don't lick envelopes but that's mainly because they don't like the taste! One person gave me a reference to a Q and A in Gluten Free Living from 2007 that said indeed it is safe for us to lick envelopes. Thanks to all - we've got our answer!
