I have updated an old family recipe that is at least one hundred years old....Potoe Babka.

You can eat it straight of the oven or when lefrt over, sautee until crispy and serve with both sour cream and'or applesauce. YUMMY!!

POTATOE BABKA

5 lb potatoes,
2 large onions, grated
1.2 lb bacon cut in 1 inch slices
4 large eggs. lightly beaten
2 tbl cornstarch
4 oz milk
salt and pepper to taste
2 tablespoons chopped dill

sautee bacon until lightly browned...then sautee onions until golden. Place in bowl. Placepotoes in a tea towel and squeeeze out all the water...an impst step...
add to bowl,..Add remining ingredients, sprinkle with cornstartch and mix well.

PLace in oiled 9x13 pyrex pan and bake in 400 oven for a half hour, reduce heatto 350 and bake until golden brown and until knife inserted in center comes out clean. Let sit 15 min before serving.
