I am taking a long car trip with 3 other ladies who do NOT have Celiac. We will drive about 10 hours a day for 3 days each way and only eat Breakfast and Dinner. My problem is I am not only a Celiac but I also have hypoglycemia and MUST eat 3 meals a day. I must have protein in each meal and also for snacks. I need protein every 3 hours during the day. If I do not get this I get dizzy and feel weak etc. We will be able to take one cooler in the car for all of us. I need suggestions for things to take so I feel well. Even sometimes when I follow the celiac diet closely I have reactions to some foods- I have severe diarhhea. Can anyone suggest foods I can take along on my trip in the car?
