After reading about this more ancient version of the
wheat and it's flour in Dr. Davis's book WHEAT BELLY,
published August, 2011, I read the materials on the
website and was in touch with the grower Eli Rogosa in
Massachusetts to order some of her Einkorn Flour and Wheat.

I tested positive last year for active gluten sensitivity and
double genetic inheritance of the same. I'm doing well after
nearly a year on strict Gluten Free diet. The article by the
Italians from Padua led me to believe it might be okay to try
for me to carefully test myself on the Einkorn.
Does anyone else have experience in testing themselves for
reactivity to Einkorn? If there are a lot of responders, I can
summarize the responses.
