I seem to be getting more sensitive to gluten exposure over time...or
am I getting more careless with what I eat?
I used to have little to no response if I accidently got a little
gluten from cross contamination. Maybe a little stomach cramping for
an hour or two...but now...I get pretty severe bloating (like I'm in
my second trimester), stomach pains, pretty significant constipation,
exhaustion....
I NEVER deliberately ingest gluten in any form, but I do eat out
frequently (am careful when I do and eat at "safe" establishments),
have been lulled into thinking that if a label says "gluten-free" it
must be safe, and I eat foods that have no gluten ingredients in them
(although not certified gluten-free).
So, is it possible to get more sensitive, or am I just getting too
complacent with my diet?
Any thoughts?
