Just thought I'd add a few things:-
Re organ-meats:- Whether raw or cooked, it's probably best to leave trying kidney, and especially liver, last and going in for tongue first. Most people seem to prefer that(I recommend smoked tongue as that was a favourite of mine in SAD/SMD days). I have no idea re preparation but you could use any old spices such as garlic, black pepper, cayenne pepper etc. There must be a dozen recipes of that kind online.
Re best type of meat to eat raw:- Well, for a rawist, the only criteria, really, is that the raw meat must be 100% grassfed and either organic, "naturally-reared" or come from wild animals - otherwise, we're happy to eat pretty much every kind of raw meat. When I first started on raw, I would buy only organic fillet steak and the like, but that was hideously expensive, and I found that the cheaper cuts of raw meats were generally fattier(and therefore better for me).
For someone experimenting for the first time with raw meats, it's best to first try out eating raw meat in a social setting , so as to get used to the whole idea in a nice setting. So, try eating sashimi(raw fish) at Japanese Sashimi restaurants, eat raw(preferably wildcaught)oysters at an oyster bar, order steak tartare at French/Hungarian/Russian etc. restaurants(but leave out the butter), order raw meat kitfo at an Ethiopian restaurant or ceviche(marinated raw fish) at Peruvian restaurants etc.
