I used to manage incoming customer mail for a company, and I think an easy
way to start a letter-writing program is as follows:
 
Everyone buy a few cheap postcards & 20c stamps & leave them by your
computer.
 
When someone identifies a problem like the tortilla/oat fiber one, please
address the group with SUBJECT: LETTER REQUEST  and enclose info and address
of company.
 
Whomever reads the request will grab a postcard, jot down something like "Why
did you add Oat Flour to your corn tortillas?  I am on a gluten-free diet and
can no longer purchase them"  with a return address sticker.  We should
really see results that way.
 
Length of letter is not important.  Number of letters received is important.
