2-3 pounds makes a good batch to start with.  You get about a pint jar of  
lard per
pound of fat scraps.  Make sure they're high quality and not full of  
connective
tissue.

I've made pemmican using the rendered pork fat.  It was delicious, but  
never
really hardened up.  I put it in a jar and ate with a spoon.  Properly,  
pemmican
should be made with beef or buffalo fat so it will hold its shape.  You  
would
render it the same way.
