You can make ghee from butter.  Ghee keeps on the kitchen counter for a  
year at least.
Just take unsalted butter, melt it slowly.  The liquids will bubble gently  
for a while,
the bubbles getting smaller and smaller.  Just as soon as the bubbling  
stops, pour
it through a sieve.  What you get it pure butterfat with no milk solids.
