The original question was: how long could it be before I start feeling less tired, and have more luck losing weight on the GF diet? Thank you to all who responded. I rec'd a ton of great information, as well as support. Here is a summary of the responses I rec'd.
1. It will take time to regain my energy and lose weight. Some people suggested it would be a minimum of 6 months, but many suggested that it may be 1-2 years before I feel fully recovered.
2. Take supplements. The most commonly suggested options were Vitamin B Complex, Folic Acid and Vitamin D, but Iron, Vit K and Probiotics were also mentioned.
3. Avoid processed foods and try to focus on fruit, veg, and meat. Avoid packaged gluten free products as they tend to be high in calories and fat. Avoid white vinegar.
4. Several people have suggested Weight Watchers as a way to assist with weight loss. WW was suggested because you can choose your own food, meaning you can eat gluten free while still being on the program.
5. Be aware of possible other sensitivities that could be causing symptoms, like lactose intolerance. Corn and soy were also mentioned as possible triggers of negative symptoms.
6. Get a thyroid test. Thyroid problems seem to be common, and may contribute to the weight issue. Also ask about anemia.
7. Be careful of cross contamination and hidden sources of gluten.
8. Many sources of information were mentioned. Note that I am not personally recommending these. The sites are as follows:
