Hello all, I'm considering purchasing Carol Fenster's 1000 GF Recipes but I see that most of them call for a modified tapioca starch called Expandex. I went to their webiste for vendors and found that it's expensive and the shipping charges are rather steep. I'd like to hear from you: 1. if you've bought this product, where you found it; 2. if you've used it, did it make a difference in your baked goods; 3, if you've tried any of the recipes from this book and didn't use the Expendex, how your baked goods turned out; or 4, if you know of any other similar product.
GF baking is already expensive enough without buying a cookbook and then having to buy more expensive ingredients!
