(Size was too large so I am breaking this up into 2 e-mails.)  I had several
e-mails asking that I summarize what I learn about the Zojirushi bread
machine settings.  We have a new member that had ordered a Zo but we were
searching for assistance from those who said they used a different setting.
See below and thanks to all who provided input.  Very good!

 

Hi--I am probably that Nancy--I will tell you what I do and hopefully that
will help--
I use a mix that is excellent--Breads from Anna bread mix--it is soy rice
and nut free and has great taste and texture.  The package has orange trim
around the front  title.  There are several different types.
(1) first--Select course--push until  1:58 shows 'QUICK' and arrow points to
it (2) Crust control--push once to dark crust (3) Mix wet
ingredients--Combine eggs (I use 3 eggs instead of 2 eggs and 1 egg white),
apple cider vinegar, olive oil, and then I put about one quarter cup honey
in the bottom of a pyrex measuring cup then fill with hot water to one and a
half cup liquid. I then pour the ingredients in the measuring cup into the
bowl with the other liquid ingredients and stir til just mixed.  (4) Then
quickly (because you want the liquid to be warm to mix with the yeast you
are about to put in)   put the bread mix into the tub in the machine and
level, but make a little well to sprinkle the yeast packet in.  Then pour
the warm liquid mixture over the dry ingredients and close machine and push
start.  Stick around and push stuff down sides to make sure all is included.
The machine will mix and then when the bread is rising sometimes I gently
level it a bit a couple times during the cycle. (5) Then let it
cook--sometimes I remove it 5 minutes early so, but do not let it sit in the
machine after is it done, I think it might get too dark.   Let sit in pan
about 5 min and then dump out onto a cutting board.  Let it cool, then I
slice it very thin with an electric knife to make sandwich bread,  it is
sooooo good warm especially with butter and honey.  I place two slices right
away in a sandwich bag ziploc and it will keep for a few days, I freeze the
rest but putting the sandwich filled bags in  a freezer gallon bag to store
for a few weeks.  I try to take out the evening before so I can make
sandwiches the next morning for my son.

I have a Zo and I hit the bottom right hand button 4 times where the timing
ends up set for 2 hours and 8 mintues.  I don't hit any other button, just
the bottom right hand button.  My mixes come our perfect every time.

Not sure what they use, but I use the quick whole wheat setting with
Pamela's Products bread mix.  I was getting flat results (literally) with
the gluten free setting so I researched online and others recommended the
quick whole wheat setting.  Even at altitude it bakes up nice and fluffy.

I used the "homemade" setting for my zojirushi.  Set as follows:

Preheat 5 minutes

Kneading 18 minutes

Rise 1 - 1 hour 15 minutes

Rise 2 Off

Rise 3 Off

Bake 1:10 minutes

Keep warm Off

 

Once you set the custom time on the machine, it saves the program so you
don't have to set it each time you use the custom setting.  Now, I only use
Breads from Anna in my bread maker, so those times would apply specifically
for her mix.  I'm not sure if it would be the same for homemade or not.  My
bread turns out perfectly every time.
