Andrea suggests: I would go with coconut oil or meat dripping.  Although all vegetable oils are processed by some degree, it takes a lot less technology to squeeze oil out of olives or nuts (grind almonds into butter and wait for the oil to rise, then pour it off) than corn or soybeans.  The really paleo cooking fat, though, would be rendered from your meat.
