My son's favorite show is "How It's Made" and today the episode was on How Mushrooms are Grown. Surprise!!! They use Wheat Berries covered with mushrooms mycelium to grow mushrooms!! So does this mean we can get glutened from mushrooms? I have also heard wheat straw is used, as is a rye medium. Anyone have any information on the safety of cultivated mushrooms? I searched and could find no information, but a small comment at how the gills of the mushrooms are very hard to clean and therefore glutenous soil can be lodged in them. This totally freaks me out because a lot of times I haven't washed all the soil off, but have never worried about it because I know they sterilize it----but obviously sterile soil is not gluten free soil.

Katie
