Thank you to those who wrote to me with advice. Some asked for the recipe,
so I'll post it below. I will summarize answers in a few days.

1 1/4 c buttermilk, room temp
1 packet yeast
3/4 c potato starch
1 1/4 c cornstarch
2 T sugar
1/2 t baking soda
2 t baking powder
2 1/2 t xanthan gum
1/2 t salt
1/4 c oil
t=teaspoon
T=tablespoon
c=cup
Preheat oven 350. Combine buttermilk and yeast. Stir to dissolve yeast. Set
aside.
Combine all dry ing's. To dry ingredients, slowly add oil and milk/yeast
mixture. Mix well. Dough will look wet, thick and pasty.
Place dough in greased 9 x 4 loaf pan. Wet hands and smooth out top of
dough. Bake 25-28 minutes. Loaf will just egin to brown. Test for doneness
with a long toothpick (I use a skewer), much as you would for a cake. Cool
briefly before removing from pan.
