Celebrate International Pi Day with - what else -pie!  A mathimatical friend of mine alerted me to yet another opporuntiy to celebrate.  According to the Offical Pi Day web site:

 

Pi, Greek letter (), is the symbol for the ratio of the circumference of a circle to its diameter. Pi = 3.1415926535... Pi Day is celebrated by math enthusiasts around the world on March 14th. 

 

Try this ice cream pie with a Easy as Pie Crust (www.therubyrange.com)

 






Bake the crust according to the recpie.  Cool completely.

 

1 quart of gluten-free vanilla ice cream

1/2 cup caramel topping

1/2 cup hot fudge sauce topping

3/4 cup Spanich peanuts.

 

Soften ice cream slightly.  Press in 1/2 the ice cream.  Drizzle 1/2 the caramel and fudge sacue over this.  Sprinkle on peanuts.  Press on second 2 cup of icecream.  Drizzle on the remaining sauces.  Freeze for several hours.
