Thanks for all of the responses. They ran the gamut, as you could probably
have guessed. Many believe that the combination of soap and water take care
of the gluten and that it is not a concern. There are people who have been
diagnosed for years and years and have washed dishes with the same sponge
and have not encountered any problems (and have annual tests that come back
in the clear).

Others encouraged me not to have gluten in my kitchen at all. Others always
use a different sponge or a disposable cloth or whatever method they have
found works best for them to wash gluten and GF dishes/plates separately.

So, it sounds like it is all trial and error. There were honestly as many
different ways of approaching this as people who responded to me.

And one person let me know that I should worry about bacteria more with my
sponges than gluten. A good reminder to toss them frequently.
